Muffin Egg Bites

A quick and tasty way to start your morning—if only the rest of my day was this easy!

INGREDIENTS

  • 7 large eggs
  • 1/4 cup milk
  • Salt and pepper
  • 1/2 cup baby greens
  • 1 small tomato, chopped
  • 4 strips cooked bacon, crumbled
  • 1/4 cup shredded cheddar cheese
  • Melted butter

INSTRUCTIONS

  1. Preheat oven to 350 degrees F.
  2. Grease muffin tin with melted butter.
  3. In medium bowl, mix together the eggs, milk, salt and pepper.
  4. To each muffin tin, evenly distribute the baby greens, tomato, bacon, and shredded cheddar cheese.
  5. Pour egg mixture evenly into the tins over the toppings.
  6. Bake for 20 minutes
  7. Once cooled, freeze the egg bites inside the muffin tin.
  8. Remove egg bites from tin and place them into the FoodSaver Microwavable Meal Prep Bags.
  9. Place the bag into the drip tray of the FoodSaver Multi-Use Vacuum Sealer, select "moist" mode, then press "vacuum" and seal. Place sealed bag into fridge or freezer until ready to eat.
  10. To reheat, place the bag down on the side with the printed instructions, or place standing up in the microwave.
  11. Look at the microwavable bag instructions to determine cook time. While cooking, the bag may slowly inflate and deflate. After cooking is complete, wait 60-seconds before opening.
