The FoodSaver® SmartSeal™ V3800 Series
I am having trouble inserting the bag on my new FoodSaver® Vacuum Sealing System with SmartSeal™ Technology
Make certain all packing materials have been removed. Make certain the drip tray, bag detection tray and foam gasket are inserted correctly.
Check the following before first use: Remove tape and discard the cardboard inserts packed inside the appliance.
To do so, completely open the appliance to access the bag detection trays. First, open the appliance front door by pulling both sides towards you. Then, press gray Release Buttons and rotate housing away from you allowing it to rest on the counter.
Make certain:
1. That all packaging has been removed from inside appliance.
2. The lower foam gasket is firmly seated into the gasket channel.
3. The lower drip tray is firmly snapped into place.
4. The upper bag detection tray is snapped into place.
Close the appliance and you are now ready to begin enjoying the benefits of your FoodSaver® Vacuum Sealing System.
Tips for Easy Bag Insertion: 1. Hold Bag with two hands, gently stretch Bag while inserting. 2. Insert corner of Bag about one half inch into center of channel, then rotate Bag into Channel to activate both Flags on the Upper Bag Detection Tray. 3. Continue to hold bag until vacuum pump begins.
Hint: If the motor runs continuously without vacuuming, press cancel and try again.
What is SmartSeal™ Technology?
SmartSealTM Technology allows your FoodSaver® system to sense food moisture and automatically adjusts the seal level for a secure, reliable, air tight seal. The Automatic Bag Sensing feature takes all the guesswork out of Vacuum Sealing.
How does the new FoodSaver® with SmartSeal™ Technology sense the different types of food for best heat seal?
The New FoodSaver® Vacuum Sealing System with SmartSeal™ Technology contains liquid detection sensors in the removable drip tray that can detect liquids as soon as they have been pulled through the vacuum channel. Automatic Liquid Detection senses food type; moist or dry- and automatically adjusts seal level for a secure, reliable, air tight seal.
What is the Tray Full indicator?
When excess liquid fills the Drip Tray, the unit will turn off and the Tray Full Indicator light will activate. To resume normal operation, open Appliance Door, press two release buttons, rotate appliance away from you, and allow appliance to rest on the counter. Then empty Drip Tray, clean it and place it back in the appliance.
What is the Ten Minute Quick Marinate Cycle?
Your FoodSaver® Vacuum Sealing System with SmartSeal™ Technology has a special Quick Marinate Cycle which will last about ten minutes. During the Cycle, the vacuum motor will “hold” the vacuum for several minutes then release the vacuum allowing the food to “rest” for 30 seconds. This process will then repeat two more times. Use the FoodSaver® Quick Marinating Canister (with clear lid and large white knob). During the Quick Marinate Cycle, make sure the knob on accessory lid is set to OPEN. Do not set knob to Vacuum.
Why does my new FoodSaver® with SmartSeal™ Technology seem slower than my older FoodSaver® Vacuum Sealing System?
The Vacuum Pump actually runs 19% faster. In addition to vacuuming, remember that your new FoodSaver® Vacuum Sealing System with SmartSeal™ Technology is also automatically sensing the bag, clamping and unclamping, and running a seal cool down time.
What is Cool Down time for?
We have added a short “cool down” period immediately after the heat seal process. This allows the bag to cool down and set, ensuring an air-tight, durable Heat Seal.
How is my new FoodSaver® with SmartSeal™ Technology faster than previous FoodSaver® appliances?
The Vacuum pump on the New FoodSaver® with SmartSeal™ Technology evacuates air 19% faster than the Advanced Design Series.
What are Heat Seal Rolls?
FoodSaver® Bags and Rolls have not changed. The FoodSaver® bags are still made from the same, highest quality materials. We realize there are other storage methods, like foils, wraps and zipper bags, but these do not provide the same long term protection against freezer burn and spoilage as the patented FoodSaver® Sealing System. Our unique system takes the air our and keeps it out by creating a durable, airtight Heat Seal.
How do I operate the Bag Opener?
The Bag opener is a handy and convenient way to open sealed bags. To Use: 1. Press Bag Opener to extend (press again to retract Bag Opener for storage). 2. Fold end of bag to create a loop with the sealed bag so the Heat Sealed area is above the cutter. 3. Hold bag taught with two hands and pull bag through the cutter.
What is the CrushFree™ Instant Seal?
You can immediately stop the vacuum process when vacuum packaging delicate foods. Press the SEAL Button at any time during the vacuum process to immediately stop the vacuum and begin sealing the bag. This prevents crushing delicate items such as bread, cookies and pastries.
How do I clean the appliance?
Both the Upper Bag Detection Tray & Lower Drip Tray are removable for cleaning, and both are top-rack dishwasher safe. Empty Drip Tray after each use. Unplug before cleaning. Open front door of appliance by pulling towards you on both sides. Press gray Release Buttons and rotate housing away from you allowing housing to rest on the counter.
Remove Drip Tray by lifting the tabs on each end. The Upper Bag Detection Tray has two pivoting flags for bag detection. Remove Bag Detection Tray by lifting the tabs on each end. Do not pull on the Upper Bag Detection Flags to remove the Upper Bag Detection Tray. Wash trays in warm soapy water or place in top rack of dishwasher, allow trays to dry completely and replace into appliance.
Before closing appliance: Firmly snap the left side of the Lower Drip Tray down. Make sure the lower Foam Gasket is firmly seated into the gasket channel. Upper Bag Detection Tray MUST be inserted to use the appliance. Without the Upper Bag Detection Tray, your FoodSaver® appliance will not the detect bag when inserted in the Vacuum Channel.
Why is the Moist Food indicator flashing?
The Food Sensors in the Drip Tray will not function if liquid is allowed to remain in the Drip Tray. Remove the Drip Tray, empty liquid, clean Drip Tray and replace it in housing.
Why is the Seal Indicator Flashing?
The Seal indicator flashes to signal an ERROR. This may be caused by an improperly inserted bag. Make sure bag is placed correctly inside Vacuum Channel. (See How to Insert a Vacuum Bag.) Also review the following:
a. Check power cord to see if it is firmly plugged into an electrical outlet.
b. Examine power cord for any damages.
c. See if electrical outlet is working by plugging in another appliance.
d. Check to be certain the Upper Bag Detection Tray is properly inserted.
e. Check to ensure Release Buttons are properly latched.
f. Check to ensure Foam Gasket is properly inserted into gasket channel.
g. Check Gaskets around to make sure they are free from food material.
h. Lower Drip Tray must be firmly snapped into place.
i. If overheated, allow appliance to cool for 20 minutes.
Can potato chip or pretzel bags be used in the FoodSaver® appliance?
FoodSaver® appliance for re-sealing Mylar-type (strong, thin polyester) or stiff plastic bags. You can re-seal potato chip and pretzel bags, but do not vacuum them as you will crush the contents. Zipped storage bags and other plastic bags cannot be used due to the amount of heat generated when sealing the bags. Doing so may cause damage to your unit.
To reseal a chip bag, first cut the factory seal using scissors or the bag roll cutter. Ensure the open end of the bag is straight and smooth and allow at least three inches of empty space. Press the Seal button and insert the bag into the vacuum channel. Continue to hold the bag while the appliance clamps the bag.
For your own safety, always follow these basic precautions when using a FoodSaver® appliance
Read QuickStart card carefully for operating instructions.
Do not use appliance on wet or hot surfaces, or near a heat source.
Do not immerse any part of appliance, power cord or plug in water or other liquid.
To disconnect, unplug power cord from electrical outlet. Do not disconnect by pulling on cord. Do not operate appliance with a damaged power cord or plug. Do not operate appliance if it malfunctions or is in any way damaged. If cord or appliance is damaged, you can return it to an authorized service center for repair. For details, contact Consumer Services at number listed at bottom of page. Use appliance only for its intended use. Closely supervise children when using any electrical appliance. Do not allow appliance to be used as a toy. 120v Appliances Only: The FoodSaver® appliance has a polarized plug (one blade is wider than the other). To reduce risk of electrical shock, this plug is intended to fit in a polarized outlet only one way. If plug does not fit fully in the outlet, reverse plug. If it still does not fit, contact a qualified electrician. Do not modify plug in any way. Caution: A short power cord is provided to reduce risks from entanglement or tripping over a longer cord. An extension cord may be used when marked electrical rating is no less than electrical rating of this appliance. The extension cord should not drape over counter or tabletop where it can be tripped over or pulled on unintentionally, especially by children.

Bags & Rolls
Air was removed from the bag, but now air has re-entered
Examine seal of bag. A wrinkle along the seal may cause leakage and allow air to enter. Simply cut bag and reseal. Sometimes moisture or food material (such as juices, grease, crumbs, powders, etc.) along seal prevents bag from sealing properly. Cut bag open, wipe top inside of bag and reseal. See pages 2-3 for guidelines for specific foods.
If you are vacuum packaging sharp food items, bag may have been punctured. Use a new bag if there is a hole. Cover sharp food items with a soft cushioning material and reseal. If you are still experiencing difficulty with air in your bag, fermentation or the release of natural gases from inside the foods may have occurred. When this happens, food may have begun to spoil and should be discarded.
The bag melts
If your bag melts, Sealing Strip may have become too hot. Always wait at least 20 seconds for the appliance to cool down before you vacuum package another item unless you are using the Professional II. This model allows you to vacuum package at least 50 consecutive bags without allowing time for the appliance to cool down.
Are FoodSaver® Bags safe for food use?
Yes. The bags are made of materials that the U.S. Food and Drug Administration (FDA) has determined to be safe for food use.
Are the FoodSaver® Bags & Rolls recyclable?
Yes, the bags are recyclable under the "Other" category. Please follow the recycling guidelines and requirements of your local municipality.
Can FoodSaver® Bags be put in the freezer?
Yes. The bags are ideal for the freezer because they will keep all air and moisture out, preventing food from getting freezer burn and becoming dry and tasteless.
Can FoodSaver® Bags be put in the microwave?
Yes. You can heat cooked foods, such as leftovers, in a FoodSaver® bag. The bags should never be used to cook raw foods. When microwaving, cut open a corner of the bag before putting it in the microwave so steam can escape. Avoid microwaving foods containing a lot of oil, as oil will get hot very quickly and could cause the sides of the bag to stick together.
Can FoodSaver® Bags be re-sealed?
Yes. Just cut off the existing seal, remove as much food as you need, then re-vacuum package. Be sure to wipe off any food or grease residue inside the bag near the seal area. You can also re-seal FoodSaver® Bags after you have washed them.
Can FoodSaver® Bags be washed?
Yes, but it depends on the previous contents of the bag. Bags that previously contained fruits, vegetables, breads and dry goods can be washed and reused. Bags that contained raw meats, fish, eggs or un-pasteurized cheese should be discarded after use because they may contain invisible bacteria that will remain after washing. Bags that contained greasy or oily foods should also be discarded, as they may be difficult to clean. FoodSaver® Bags can be washed by hand, or in the top rack of the dishwasher. Use a wooden clothespin or a clip to hold the bags in place. Dry completely. They can then be re-vacuumed.
Do I have to use the FoodSaver® Bags? Can I vacuum package in other plastic bags?
To vacuum package with the FoodSaver®, you must use the FoodSaver® Bags. They are specially designed to be strong enough for vacuum packaging and the waffle pattern in the bag is a patented design that makes sure air does not get caught in pockets around the food. FoodSaver® Bags have five layers, including an outer layer of nylon. This configuration completely prevents air and moisture from getting back into the bag and prevents odors from getting out or in. Other plastic bags allow air to seep through.
If you want to use your FoodSaver® appliance to re-seal, but not vacuum package a bag (without removing the air first) you can use it on Mylar type (strong, thin polyester) or stiff plastic bags, not any other types. For example, you can re-seal potato chip bags.
How can I tell if a bag is defective?
A good way to test a bag is to just seal both ends of the bag-do not vacuum seal the bag. Submerge the bag in water for a few seconds and look for bubbles in the bag itself or near the seal strip area. If there are bubbles, the bag is defective.
I am having problems making the first seal on a bag I cut from a roll.
Be sure you do not place the bag over the black gasket, or into the vacuum channel. Lay the end of the bag on the seal bar only, then close the lid, lock the clips (if necessary), then press the "on" button (or the lid).
I have a different food-packaging appliance made by another company. Can I use the FoodSaver® Bags with it?
Our FoodSaver® Bags and Rolls are designed for FoodSaver® units only. The sealing bar on your unit may either be too hot, which will melt the bags, or too cool, which will result in a bag that is not sealed properly.
What are FoodSaver® Bags made of?
They are made of polyethylene (a type of plastic) with an outer layer of nylon for added strength and rigidity.
When you get to the end of a roll of bag material, why don't the bags seal?
Try cutting off about 1/2 inch from the end of the bag. It is possible that the very end of the roll was compressed when rolled. Also, make sure you have made a straight cut. Check to see if you have the end of the bag over the gasket or into the vacuum channel. It should only go up to the gasket, no further.
Which side of the bag should be placed on the seal bar?
Place the embossed (rough) side down. If the bag is curling (the end of the roll may do this), place the curled side down over the seal bar and can be used either side up.
Why do FoodSaver® Bags cost more than other plastic bags?
Other plastic bags are usually made of one layer of polyethylene (a type of plastic). FoodSaver® Bags are 5-layer including an outer layer of nylon. The nylon layer not only makes the bags stronger, it also creates a complete air, moisture and odor barrier. Unlike other bags, FoodSaver® Bags can be simmered in water or microwaved (so you can reheat leftovers or pre-cooked dinners).
When simmering food in a FoodSaver® Bag, it splits open at the seam.
Only place bags with frozen food inside the simmering water. The coldness of the food will keep the bag from becoming too hot while the food is heating up. If the food in the bag was frozen, but the bag split anyway, your bags are most likely defective.
How do I make a Bag from a Roll?
1. Cut the desired amount of roll material.
2. Press Seal Button. The red seal light will illuminate.
3. Insert open end of bag into Vacuum Channel until clamp motor starts. The roll material must be centered between arrows. Continue to hold until clamp motor stops.
4. When red seal light turns off, sealing is complete.
Which side of the bag should be placed into the vacuum channel?
The Seal will be effective with either clear side or textured side up. However, if the bag is curling (the end of the roll may do this), place the curled side down to allow for smooth and easy bag insertion.
I am having problems making the first seal on a bag I cut from a roll.
Ensure bag is flat and smooth and you have allowed three inches of space between the open end of the bag and the contents inside the bag.
If making a Seal to create a bag, first press the Seal button before inserting the bag. Hold the bag with two hands so the end curls DOWNWARD, gently stretch the bag flat while inserting. Insert a corner about one-half inch of Bag into center of Channel, then rotate bag into channel to activate both flags (on upper bag detection tray). Insert and wiggle side-to-side, while holding with two hands. Insert bag until the clamp motor begins and continue to hold unit the clamp motor stops.
Can I vacuum package bread?
It is not recommended to vacuum package soft breads such as white bread. French bread and hard rolls must be frozen first, then vacuum packed.
Will flour still get bugs in it after it is vacuum packed?
Insects and their larvae cannot survive in a low oxygen environment, such as that created when you vacuum package your dry foods such as flour, cornstarch, corn meal and cereals.
All Other FoodSaver® Appliances
Every time I press the "on" button on my appliance, the clips pop open. What is wrong?
This is normal. The clips are only meant to aid in the vacuum process. Once the appliance has started, the clips will automatically unlock.
My FoodSaver® appliance won't seal. What is wrong?
First, close the lid of the unit without placing a bag in it. Start the appliance and let it go through its cycle. When the unit stops, gently touch the seal bar. Is it hot/warm? If the seal bar is not hot or it is too hot (and the bags have melted), then there may be something wrong with the sealing bar. Please call customer service.
My FoodSaver® appliance won't seal. What is wrong?
First, close the lid of the unit without placing a bag in it. Start the appliance and let it go through its cycle. When the unit stops, gently touch the seal bar. Is it hot/warm? If the seal bar is not hot or it is too hot (and the bags have melted), then there may be something wrong with the sealing bar. Are you trying to vacuum package items that are not moist? If so, test the bag by placing a spoon in a bag and place the end of the bag into the vacuum channel, close the lid and press the ON button. Lock the side clips or press down on the lid and allow the unit to go through the entire cycle. If the bag seals, then now you are able to vacuum/seal bags. (If the bag seals, you are now able to vacuum/seal bags.) Are you trying to seal moist items, such as unfrozen meats or fish? Try placing the meat or fish in a bag, then taking a paper towel and folding it in half twice. Place the folded paper towel into the bag so it is between the item and where the bag will be sealed. Place the open end of the bag into the vacuum channel, close the lid and start the vacuum/seal process. The paper towel traps excess liquids and won't affect the flavor of the food item. If the unit seals properly, then you should be able to vacuum/seal bags. You can also slightly pre-freeze meat or fish for 15-30 minutes in order to eliminate some of the juices. While examining your appliance, check the lower gasket for any cracks, dents or food particles. Please clean the gasket by wiping it with a cloth.
My FoodSaver® appliance won't vacuum, why?
First, please place a spoon in a bag, and place the open end of the bag into the vacuum channel of the unit. Make sure the bag is resting entirely inside the vacuum channel area. It should NOT go over and (or) behind the vacuum channel. Turn the unit on and let it go through its cycle. This technique can help determine if the problem is with the vacuum pump or with the bag.
If the bag won't vacuum, test the bags by first sealing the bag, then place it in a sink with enough water to be able to submerge the entire bag. If you see bubbles, the bags may be defective.
If there are no bubbles and the bags hold their air, there may be a problem with the vacuum pump of the unit. Please contact Customer Service.
If a complete vacuum was drawn in the bag but it loses its vacuum after awhile, then check the seal. A wrinkle along the seal may have created an air pocket. You can reopen the bag and smooth out the material along the sealer bar, then re-seal the bag.
If the above troubleshooting techniques do not work, please contact Customer Service.
Nothing happens when I try to vacuum package
Check power cord to see if it is firmly plugged into electrical outlet. Examine power cord for any damages. See if electrical outlet is operative by plugging in another appliance. If your appliance has a mode switch, make sure it is set to the correct mode. Refer to your QuickStart card for instructions. Make sure bag is placed correctly inside Vacuum Channel. Wait 20 minutes to allow appliance to cool off, and then try using it again.
Note: The appliance will shut off automatically if it becomes too hot.
To keep your appliance from overheating:
Wait at least 20 seconds for appliance to cool down before you begin vacuum packaging another item. Keep lid open before vacuum packaging.
The gasket is always loose or has a tear. What do I do?
Is the problem with the lower or upper gasket? The lower gasket is located on the inside center base of the appliance (around the vacuum channel) .The upper gasket is located on the underside of the lid, just behind the thick rubber strip.
If it is the lower gasket, take out the lower gasket, clean it and reinsert the gasket into the vacuum channel.
If it is the upper gasket, please contact Customer Service.
Air is still in the bag:
Make sure open end of bag is resting entirely inside Vacuum Channel. If edge of bag is beyond Vacuum Channel, bag will not seal properly.
Examine bag for leaks. To see if your bag has a leak, seal bag with air, submerge it into water and apply pressure. Bubbles indicate a leak. Use a new bag if bubbles appear.
If you are using a custom-sized FoodSaver® Bag, check seal of bag. A wrinkle in the bag along the seal may cause leakage and allow air to enter. Just cut bag and reseal.
Do not attempt to make your own side seams for a FoodSaver® Bag. The bags are manufactured with special side seams, which are sealed all the way to the outer edge. Making your own side seams may cause leakage and allow air to enter.
FoodSaver® Bottle Stoppers
The FoodSaver® Bottle Stopper will not vacuum
Check Bottle Stopper to see if it fits snugly inside bottle. If it is loose, air may enter and prevent it from vacuuming properly. Examine neck of bottle and tip of Accessory Hose for food materials. Any gaps can prevent bottle from vacuuming properly. Make sure Accessory Hose is securely in Accessory Port on appliance and on Bottle Stopper.
Note: For all accessories, make sure Accessory Hose is completely inserted into appliance and lid of accessory. Twist gray tab on Accessory Hose while inserting to ensure a tight fit.
How do I remove a bottle stopper?
To remove the FoodSaver® Bottle Stopper, simply twist and pull up on the bottle stopper to release the vacuum.
What are the bottle stoppers used for?
FoodSaver® Bottle Stoppers are the best way to keep wine, oils and non- carbonated bottled liquids fresh longer. You will keep their delicate taste fresh by minimizing exposure to air.
FoodSaver® Bottle Stoppers are not to be used with plastic bottles. Also, do not use with any carbonated or sparkling beverages. Carbonation happens under pressure. A vacuum removes this pressure, releasing the bubbles and causing the carbonated or sparkling beverages to become flat.
FoodSaver® Canisters
I saw jars and canisters advertised with the appliance. Why didn't I receive them?
The jars and accessories are packaged differently with each appliance. Browse to Products to order canisters and accessories. We sell all of our accessories via our website or you can order by calling Customer Service.
The FoodSaver® Canister will not vacuum
Make sure rubber gasket on lid is free from food materials. Examine rim of canister for cracks or scratches. Any gaps can prevent canisters from vacuuming properly. Make sure Accessory Hose is securely inserted into Accessory Port on appliance and in port on canister lid.
The FoodSaver® Universal Lid, Bulk Canister, Quick Marinator will not vacuum
When using the Universal Lid, rim of container should be smooth and flat. Ragged edges will prevent lid from vacuuming properly. Make sure rubber gasket underneath lids as well as rim of canisters or containers is free from food materials. Check knob on lid to see if it is closing and opening properly and that there are no food materials caught inside. Make sure Accessory Hose is securely inserted into Accessory Port on appliance and in port on accessory lid. Make sure knob on accessory lid is set to Vacuum. (If your accessory lid has a knob, make sure the knob is set to Vacuum.)
Are FoodSaver® Canisters dishwasher-safe?
The base of the canisters can all be washed in the dishwasher. The bases should only be placed in the top rack of the dishwasher. The lids should be washed by hand.
Are FoodSaver® Canisters microwave-safe?
The base of the Square Canister and the Bulk Canister (not the lids) is microwave-safe, but it should only be used to RE-HEAT foods, not to cook them in the microwave. The Designer Canisters are designed for storage only and should not be used to cook or re-heat foods in the microwave.
Are the FoodSaver® Canisters recyclable?
Yes, the canisters (base and top) are recyclable under the "Other" category. Please follow the recycling guidelines and requirements of your local municipality.
Can I put my FoodSaver® Canisters in the freezer?
No. Due to the expansion and contraction that occurs when something is frozen then thawed, the canisters will eventually crack and will no longer hold a vacuum.
Can I vacuum package in canisters other than the FoodSaver® Canisters?
No. Only FoodSaver® Canisters would be able to withstand the pressure of the vacuum that is created, and our canisters have a special seal inside of the lid to ensure a complete vacuum/seal. Universal Lids are a good way to vacuum a container other than a canister.
I have been vacuum packaging my coffee in a Designer Canister, but now it won't hold the seal. What can I do?
The oil in the coffee (powdered or beans) is being drawn up into the seal area. Place a coffee filter or napkin on top of the coffee before placing the lid on the canister. This will catch the oil and allow for a good seal every time.
Is there a FoodSaver® Canister for marinating food?
Yes. The FoodSaver® Square Canister is the perfect item for marinating foods. Foods will marinate in minutes when vacuum packaged because the vacuum process opens the pores of the food and absorbs the marinade more quickly. The base of the square canister is microwavable, making it perfect for re-heating foods. You can also marinate in FoodSaver® Bags or FoodSaver® Designer Canisters.
Is there a FoodSaver® Canister that can vacuum package bread?
There is not a specific canister to vacuum pack bread, but you can use the 6 Quart Bulk Storage Canister. If the loaf of bread is too long, just take some of the slices and place them down inside the canister surrounding the rest of the loaf. However, it has been our experience that if you must vacuum pack the same loaf more than once, it tends to remove the flavor of the bread and can make the bread go flat.
FoodSaver® FreshSaver® Handheld Vacuum Sealing System
How is the FoodSaver® FreshSaver® different from my Full Size FoodSaver® Heat Seal Appliance?
The FreshSaver® Handheld is small and compact and works great for refrigerator items, such as deli meats and cheeses, that you access everyday. The Vacuum Zipper Bags and Deli Containers are convenient and easy to get in and out of for everyday use.
The full-size FoodSaver® appliance is for longer term storage, and works especially well for keeping freezer items protected from freezer burn. It’s also great for larger quantities such as items purchased in bulk or on sale.
Can I use regular FoodSaver® (Heat Seal) bags and rolls with the FoodSaver® FreshSaver® Handheld?
No. The FreshSaver® Handheld is designed to be used exclusively with the FoodSaver® Vacuum zipper bags and deli trays. The FoodSaver® bags require a heat seal and the FreshSaver® bags have a zipper seal so they are easy to get in and out of for everyday use.
Why should I have both the FoodSaver® FreshSaver® and my Full-Size FoodSaver® Heat Seal Appliance?

FoodSaver® Jar Sealers
The Mason jar will not vacuum
The Jar Sealer is designed for use with Ball® and Kerr® Mason jars. Check Jar Sealer to see if it is centered and pressed firmly over Mason jar lid. Make sure rubber gasket on Jar Sealer is free from food materials. Examine rim of Mason jar for cracks or scratches. Any gaps can prevent jars from vacuuming properly. Check metal lid of Mason jar to see if it is bent. Make sure Accessory Hose is securely in Accessory Port on appliance and on Jar Sealer. Try using two jar lids instead of one. Remove second lid from Jar Sealer when vacuum process is finished.
Why is the Jar Sealer no longer included in FoodSaver® packages?
We used to include the Wide-mouth Jar Sealer in our packages, but our new canister lid styles no longer require Wide-mouth jar sealers.
FoodSaver® Universal Lids
What other kinds of jars, cans and bottles can I use for vacuum packaging?
FoodSaver® Universal Lids allow you to vacuum package many foods right in their original containers such as thick glass jars and metal cans. This is a great way to store pasta sauce, salsa, applesauce, fancy mustards, gourmet sauces, dessert toppings and coffee.
However, if the container is thin plastic or glass, the draw of the vacuum can make the container implode.

120v Appliances Only: The FoodSaver® appliance has a polarized plug (one blade is wider than the other). To reduce risk of electrical shock, this plug is intended to fit in a polarized outlet only one way. If plug does not fit fully in the outlet, reverse plug. If it still does not fit, contact a qualified electrician. Do not modify plug in any way.
Caution: A short power cord is provided to reduce risks from entanglement or tripping over a longer cord. An extension cord may be used when marked electrical rating is no less than electrical rating of this appliance. The extension cord should not drape over counter or tabletop where it can be tripped over or pulled on unintentionally, especially by children.
Mason Jars
What are Mason jars?
The typical jars used for home canning are named after John L. Mason, the inventor of the first common canning jar. Mason jars are sold at most supermarkets and hardware stores. They come in several brands; for best results, we suggest using Ball® and Kerr® brands or Benardin® (a Canadian brand) with your FoodSaver® appliance.
What size are Mason jars?
There are two sizing aspects to consider:
The diameter of the mouth opening. Mason jars are available in two different diameters: wide-mouth and regular. (Note: Regular jars are sometimes incorrectly referred to as narrow-mouthed jars.) FoodSaver® Jar Sealers come in both wide-mouth and regular sizes.
The volume capacity. Wide-mouth and regular mason jars are available in a range of sizes including the 4 oz., half-pint, pint and quart.
Where can I buy Mason jars?
Only certain types of Mason jars can be stored in the freezer. If you plan to vacuum package and freeze in Mason jars, you need to buy the Mason jars that are labeled "Can or Freeze Jars." These jars are designed with an opening that is wider than their base in order to allow liquids to expand. To allow for expansion, leave at least one inch of space in the quart-size jars and a half-inch for smaller jars when filling.
Do FoodSaver® Jar Sealer attachments work with all Mason jars?
The FoodSaver® Jar Sealer is designed for Ball® and Kerr® brand wide-mouth and regular Mason jars. Wide-mouth Jar Sealers can only be used with wide-mouth jars. Regular Jar Sealers are only for regular mason jars.
Do FoodSaver® Jar Sealers fit Canadian Mason jars?
FoodSaver® Jar Sealers designed to fit Benardin® Mason jars sold in Canada.

Are there any foods that I should not vacuum package?
Yes, do not vacuum package soft cheese, mushrooms, or garlic.
Can celery be vacuum packaged then frozen?
No. Due to the high water content of these vegetables, it is recommended that you do not freeze them. Instead, wash and dry them thoroughly, vacuum pack them in canisters, and store in the refrigerator until needed. They will last up to 6 weeks in this manner.
Can cooked food be vacuum packaged?
Yes, with the exception of tomatoes (see FAQ #2 below). Cooked foods must be at least room temperature before vacuuming or you run the risk of bacterial growth.
Can foods be defrosted while still in the FoodSaver® Bag?
Yes. But, you MUST defrost all vacuum packaged perishable foods in the refrigerator. Never leave any perishable foods at room temperature while they are still vacuum packaged. Vacuum packaged perishable foods must be refrigerated or frozen. The food inside the bag is not sterile.
Can FoodSaver® Bags be washed and reused?
Yes, but it depends on the previous contents of the bag.
Bags that previously contained fruits, vegetables, breads, dry goods, and many desserts can be washed and reused. Bags that contained raw meats, fish, eggs or un-pasteurized cheese should be discarded after use because they may contain invisible bacteria that will remain after washing. Bags that contained greasy or oily foods should also be discarded, as they may be difficult to clean. FoodSaver® Bags can be washed by hand, or in the top rack of the dishwasher. Use a wooden clothespin or a clip to hold the bags in place. Dry completely. They can then be re-vacuumed.
Can frozen food be vacuum packaged?
Yes, but look for sharp edges that may cause a puncture in your bag. Place a paper towel around the sharp edge, then vacuum and seal the bag. The paper towel will not change the taste or texture of the food item it is near.
Can mushrooms be vacuum packaged?
No. Do not vacuum package mushrooms.
Can tomatoes be vacuum packaged?
Yes, the whole tomato may be pre-frozen and then vacuum packaged and stored in the freezer. This may cause the texture of the tomato to change and become limp after thawing. It is not recommended that fresh whole tomatoes be vacuum packaged and stored in refrigerator or at room temperature. If the tomato has been properly processed into tomato products, it may be stored in the refrigerator but this depends on the processing that was used.
How can berries be vacuum packaged without crushing them?
Wash the berries and dry thoroughly. Pre-freeze the berries by placing them on a cookie sheet, and put them in the freezer for about 2 hours. Now, you can vacuum package them without crushing them. To store fresh berries in the refrigerator, place them in a FoodSaver® Canister and vacuum package it. The berries will last up to a week or more this way.
Why can't certain vegetables be vacuum packaged?
Cruciferous vegetables such as broccoli, cauliflower, cabbage and Brussels sprouts give off gases when they are stored. This gas will cause the bag to expand, and the vegetables will go bad. The best way to store all vegetables is to blanch them first, then cool, dry, vacuum pack and freeze.
Why does my vacuum packaged meat turn brown? Is it safe?
When red meat is vacuum packaged, it tends to turn a darker shade of brown due to the lack of oxygen in the bag. The contents are perfectly safe for eating.

What are vacuum packaging appliances?
FoodSaver® vacuum packaging appliances remove the air from bags, rolls and food storage containers then seal these items so that air cannot re-enter. Vacuum packaging is a superior alternative to traditional food storage methods because it removes the oxygen that causes foods to spoil. Many bags, rolls and containers claim to protect food, but they are simply sealing the air in, instead of vacuuming it out before sealing.

What does removing the air do?
The vacuum packaging process extends the life of foods by removing most of the air from the sealed container, thereby reducing oxidation, which affects nutritional value, flavor and overall quality. Removing air can also inhibit growth of microorganisms, which can cause problems under certain conditions:
Mold - Easily identified by its fuzzy characteristic. Mold cannot grow in a low oxygen environment, therefore vacuum packaging can virtually eliminate it.
Yeast - Results in fermentation, which can be identified by smell and taste. Yeast needs water, sugar and a moderate temperature to grow. It can also survive with or without air. Slowing the growth of yeast requires refrigeration, while freezing stops it completely.
Bacteria - Results in an unpleasant odor, discoloration and/or soft or slimy texture. Under the right conditions, clostridium botulinum (the organism that causes Botulism) can grow without air and cannot be detected by smell or taste. Although it is extremely rare, it can be very dangerous.
What storage temperatures are safe?
To preserve foods safely, it is critical that you maintain low temperatures. You can significantly reduce the growth of microorganisms at temperatures of 40°F (4°C) or below. Freezing at 0°F (-17°C) does not kill microorganisms, but stops them from growing. For long-term storage, always freeze perishable foods that have been vacuum packaged.
It is important to note that vacuum packaging is not a substitute for canning and it cannot reverse the deterioration of foods. It can only slow down the changes in quality. It is difficult to predict how long foods will retain their top-quality flavor, appearance or texture because it depends on age and condition of the food on the day it was vacuumed packaged.
IMPORTANT:Vacuum packaging is NOT a substitute for refrigeration or freezing. Any perishable foods that require refrigeration must still be refrigerated or frozen after vacuum packaging.
Non-Food Usage
Can I keep comic books or coins in FoodSaver® bags?
Yes, but just seal the bags, do not vacuum them. The pressure caused by the vacuum can cause the pages and print transfers to stick together. Coins can be vacuum-packed, but be sure that you place some type of backing, such as cardboard, in the bag against the "waffle" side, and face the coins toward the smooth side of the bag. This will eliminate the possibility of any marks left on the coins after long term storage.
You should also put any printed materials between cardboard or in an archival sleeve before vacuuming. Otherwise the printing may transfer to the bag if you ever remove the material from the bag. We cannot guarantee the preservation of any items you choose to vacuum package.

What is the warranty on FoodSaver® appliances and accessories?
All FoodSaver® products have a One-Year Limited Warranty.
Can zipped storage bags, potato chip or pretzel bags be used in the FoodSaver® appliance?
You can re-seal potato chip and pretzel bags, but do not vacuum them as you will crush the contents. Zipped storage bags and other plastic bags cannot be used due to the amount of heat generated when sealing the bags. You run the risk of melting the bag and ruining your unit.
Why does the infomercial say that the FoodSaver® system cannot be bought in stores when I've seen it in retail stores?
The particular unit and combination of accessories shown in the infomercial is not available in stores. Also, the money-saving coupons and the three-payment plan are only available when ordering directly from the infomercial.
How do I know when full vacuum has been achieved?
Wait for the vacuum cycle to end (when the sound stops) and the appliance light turns off. Once that happens, you can remove the accessory hose from the bottle stopper. The vacuum packaging is now complete.
What is the Food button for?
This changes the seal level for type of food – moist or dry. Liquids can be drawn up by the vacuum process and liquids between the layers of the bag can have a cooling effect on the heat seal. Adjustable Food Settings Seal Level can extend the seal time to compensate for liquid and create a secure, reliable and air-tight seal.
Hint: When vacuum sealing very moist foods such as stew, try letting the bag hang lower than the unit, by placing it on an open top kitchen drawer. Hit the seal button once you see liquids start to move up the bag. When sealing large volumes of liquid, it is normal to have some air bubbles remain in the bag.
What is the PulseVac feature?
Pulse Vac is available on select models only. PulseVac™ allows manual starting and stopping of vacuum, for optimal control of air removal, which prevents crushing of delicate foods such as baked goods and potato chips.
